sturgeon, (family Acipenseridae), any of about 29 species[1] of fishes[2] of the family Acipenseridae (subclass Chondrostei), native to temperate[3] waters of the Northern Hemisphere. Most species live in the ocean[4] and ascend rivers[5] (possibly once in several years) to spawn in spring[6] or summer[7]; a few others are confined to fresh water. Several species provide caviar[8] from eggs[9]. Most species are considered to be critically endangered[10].
